Valeric acid, also called pentanoic acid, is a straight-chain alkyl carboxylic acid. It is extracted from the root and rhizome of valeriana officinalis. Valeric acid has an unpleasant odor, and it is soluble in water (40g/l), ethanol and diethyl ether.

Valeric acid can be used as food additives because of its fruity flavor. According to FEMA (Flavor Extract Manufacturers Association), the maximum useage level of valeric acid is 1.2ppm in soft drinks, 1.8ppm in ice cream or other iced products, 2.5ppm in candy, and 8.0ppm in baked food.

Volatile esters of valeric acid tend to have pleasant odors and are used in perfumes and cosmetics.

Valeric acid can cause irritation if it contacts with the skin, eyes, or mucous membranes.
